how to cook lamb chops - This recipe for roast lamb chops is really an idea or even a guideline rather than necessarily a recipe as a result. This is a rustic family meal which was probably cooked by a lot of Mama s in outdoor wood ovens within the southern areas of Italy using ingredients they happened to possess readily available. When you have a wood oven by all means use it, otherwise throughout us, these roast lamb chops will be just as good using your regular kitchen oven.

how to cook lamb chops - You may make this dish just as simply may it be dinner for two main or dinner for any whole crowd. Also, you do not necessarily need to take lamb - try it with chicken, turkey or even goat pieces. And, use pretty much of any from the ingredients to fit your own taste. Tinkering with meals are half the enjoyment.

My personal favourite is utilizing lamb chops because they cook to tender perfection.

INGREDIENTS: (for 4 people)

8 lamb chops 12 -16 small whole potatoes or, a couple of large potatoes cut into wedges 6 cloves of garlic, whole or chop them roughly Rosemary and oregano Salt and pepper to taste A splash of white wine and water - about half a cup of each in order to keep your base moist Four to six chopped fresh tomatoes or about 1 cup bottled tomato puree (do not add a lot of, sufficient to include a bit colour and flavour) A small number of grated pecorino cheese A tiny number of dry breadcrumbs

HERE S HOW TO ASSEMBLE:

Roughly layer the lamb chops with the potatoes.
Poke the garlic cloves between the lamb and potatoes.
Sprinkle with fresh or dried rosemary and oregano, salt and pepper.
Pour wine and water down one for reds so they won t wash off the seasoning.
Scatter chopped tomatoes or tomato puree over lamb and potatoes.
Finish having a handful of grated pecorino cheese sprinkled over.
Scatter with breadcrumbs to take in any excess liquid.

Cover baking dish with foil and bake for about one hour at 200 Celcius. Remove foil throughout the cooking and bake until everything is tender, probably another hour or so.

Which is about as easy as it gets.
