Rosemary and oregano&lt;br /&gt;
Salt and pepper to taste&lt;br /&gt;
A splash of white wine and water - about half a cup of each in order to keep your base moist&lt;br /&gt;
Four to six chopped fresh tomatoes or about 1 cup bottled tomato puree (do not add a lot of, sufficient to include a bit colour and flavour)&lt;br /&gt;
A small number of grated pecorino cheese&lt;br /&gt;
A tiny number of dry breadcrumbs&lt;br /&gt;
&lt;br /&gt;
HERE S HOW TO ASSEMBLE:&lt;br /&gt;
&lt;br /&gt;
 Roughly layer the lamb chops with the potatoes.&lt;br /&gt;
 Poke the garlic cloves between the lamb and potatoes.&lt;br /&gt;
 Sprinkle with fresh or dried rosemary and oregano, salt and pepper.&lt;br /&gt;
 Pour wine and water down one for reds so they won t wash off the seasoning.&lt;br /&gt;
 Scatter chopped tomatoes or tomato puree over lamb and potatoes.&lt;br /&gt;
 Finish having a handful of grated pecorino cheese sprinkled over.&lt;br /&gt;
 Scatter with breadcrumbs to take in any excess liquid.&lt;br /&gt;
&lt;br /&gt;
Cover baking dish with foil and bake for about one hour at 200 Celcius. Remove foil throughout the cooking and bake until everything is tender, probably another hour or so.&lt;br /&gt;
&lt;br /&gt;
Which is about as easy as it gets.&lt;br /&gt;
